Cobb Egg Salad

6 large eggs, hard-boiled and peeled
4 pieces of bacon cooked and chopped
1/4 cup diced grape tomatoes
1/4 cup chopped arugula
1/4 cup finely shredded cheddar cheese
1/4 cup crumbled blue cheese
6 tbsp mayonnaise
2 tsp. dry ranch dressing mix
- Cook the bacon and crumb into pieces, set aside. Chop the eggs into chunks.
- In a mixing bowl, combine all the ingredients until well combined.
- Serve with low carb bread or enjoy it as it is.
