For the crust:
2 tablespoons sugar
2 cups white flour
A pinch of salt
3 tablespoons ice water
12 tablespoons cold butter
For the filling:
2 eggs, whisked
1 and ¼ cup sugar
10 tablespoons melted and chilled butter
Juice from 2 lemons
Zest from 2 lemons, grated
In a bowl, mix 2 cups flour with a pinch of salt and 2 tablespoons sugar and whisk.
Add 12 tablespoons butter and the water, knead until you obtain a dough, shape a
ball, wrap in foil and keep in the fridge for 1 hour.
Transfer dough to a floured surface, flatten it, arrange on the bottom of a tart pan,
prick with a fork, keep in the fridge for 20 minutes, introduce in your air fryer at 360
degrees F and bake for 15 minutes.
In a bowl, mix 1 and ¼ cup sugar with eggs, 10 tablespoons butter, lemon juice and
lemon zest and whisk very well.
Pour this into pie crust, spread evenly, introduce in the fryer and cook at 360 degrees
F for 20 minutes.
Cut and serve it.
