INGREDIENTS:
4 duck breasts
1 and ½ tablespoons lemongrass, chopped
3 tablespoons lemon juice
2 tablespoons olive oil
Salt and black pepper to the taste
3 garlic cloves, minced
For the mango mix:
1 mango, peeled and chopped
1 tablespoon coriander, chopped
1 red onion, chopped
1 tablespoon sweet chili sauce
1 and ½ tablespoon lemon juice
1 teaspoon ginger, grated
¾ teaspoon sugar
DIRECTIONS:
In a bowl, mix duck breasts with salt, pepper,
lemongrass, 3 tablespoons lemon juice, olive
oil and garlic, toss well, keep in the fridge for
1 hour, transfer to your air fryer and cook at
360 degrees F for 10 minutes, flipping once.
Meanwhile, in a bowl, mix mango with
coriander, onion, chili sauce, lemon juice,
ginger and sugar and toss well.
Divide duck on plates, add mango mix on the side
and serve.
