Dressing
¼ cup olive oil
2 tbsp red wine vinegar
1 tsp minced garlic
2 tsp dried oregano
1/4 tsp salt
Salad
1 large cucumber, halved lengthways and sliced
4 vine-ripened tomatoes, cut into wedges
1 green pepper, deseeded and sliced
½ red onion, sliced thinly
7 oz (200g)creamy feta cheese, cubed
½ cup olives
1 large avocado, diced

  1. In a jar, whisk all the dressing ingredients until well combined.
  2. Combine all the salad ingredients, pour over the dressing and toss to coat.
  3. Season with salt and pepper.
